Gtx 1060 can handle 4 monitors for sure without having any issues. Due to this image
You have 2 hdmi ports 2 display ports and one dvi-d port. You can use a display port to hdmi adapter in order to work on that cable. I think it would work.

But will it support 5 displays? I have no problem with cables. I have DVI-D, HDMI and DP inputs on my monitors. I just don't know if 1060 will support 5 displays output simultaneously.
I have 8 displays (1920x1200px) to connect. I intend to use intel CPUs IGP for 3. If I can't find nVidia solution I will be forced to go with AMD RX 570/580 (which are now impossible to get) or choose 2 GPU system with AMD Ryzen instead of intel build. I'm looking for cost effective, low power build if possible.
*I've just found out that ASUS only supports 4 displays :-( -> "Up to four monitors can be used at the same time, and with simultaneous multi-projection you can game without experiencing stretched viewpoints."

I haven't ever connected 5 displays into one card. I think sir that the limit is 4 monitors on the card relating to this thread. : https://linustechtips.com/main/topic/654220-can-you-hook-up-5-monitors-simultaneously-with-a-gtx-1070/
I also think that the 5'th monitor you can plug into your motherboard and it will work then because it will be using a integrated gpu.

Unfortunately it looks like there isn't any I'll have to go with AMD if I can find any.

If you want to go with AMD , I suggest waiting for VEGA. I NEVER TYPE WAIT FOR VEGA! This time I do. It will be out in a month. Just wait for it and see if it is worth the extra money. One more thing it will be more expensive than gtx 1060 or rx 580. Also I don't recommend getting rx 580's from sapphire as I had problems with them. Gigabyte Aorus worked the best for ME.

please take note of the resolution you intend to use. Processing power and connector wise, 1060 should easily handle 8 1080p monitors in light 3D applications. Forget about dvi and hdmi, all you need is DisplayPort which supports daisy chaining. One dp port can drive 4 1080p monitors.
I suggest you to bring along your machine and visit the shop, test it out before buying the monitors.

Here is what I found so far, any Nvidia gtx will support 4 monitors max even though the max resolution is over 7,000. I think Nvidia wants you to buy 2 GPU's. 2 gtx GPU's (gtx970 and above) in sli mode will connect 5 or 6 monitors but maybe more, not sure. Yes, you have to buy 2!
AMD: my first GPU was Rx280x Matrix from Asus and it had 6 ports and I connected 5 sony HD tv's in portrait view and used eyeinfinity to make ONE dispay;thats 1080 x5 by 1920 resolution, that is a display.
Now that my Asus display broke (and all my other Asus products broke within 3 years),I am looking for a non-asus GPU that will give me the same performance with ONE GPU!
Reviewing so far and I am not finished researching, the Rx580 might be the one.
Nvidia also makes an 8 port GPU for $700 but its for business and not very good for gaming. Yes, you can connect all 8 displays atmonce but its really for the Stockmarket
If any one can add info on AMD (non-ASUS) GPU that supports 5 monitors in portrait view, that would make my day.
